Assassin's Creed games are more similar to Halo Combat Evolved in that they have cutscenes play out in the scene, but using animations, camera angles, positioning, etc. that's been pre-ordained and set by data. Using data and tools to create cutscenes is not an issue. Now the Animations set by the AI are not made on the fly either.

Like the entire game. Also, the prerenered cutscenes are fixed 16:9 (assassinating an important target and the dying conversation cutscenes). There are only a handful of AAA games that really, truly support 21:9 throughout the game. Tomb Raider and it's sequel comes immediately to mind. Coffinhal.
